Spicey Apple with Chipotle Smoked Paprika and Mustard seed

3 kg apples, cored,peeled and chopped

625 g onions, peeled and chopped

2 tbspn smoked paprika powder

1 tbspn yellow mustard seed

1 tbspn cumin seed

2 tbspn salt

½ litre apple cider vinegar

½ litre chipotle infused ACV

500 g sugar

5 tbspn arrowroot

 

Apple with Rose and Ras el Hanout

3 kg apples, peeled, cored and chopped

½ kg damsons (optional)

3 tbspn Ras el Hanout spice blend*

2 tbspn salt

1l rose petal and raspberry infused ACV

500g honey

5 tbspn arrowroot

 

Apple with Curry and Tamarind

2.5 kg apples, peeled cored and chopped

700 g onions, peeled and chopped

450 g tamarind, dried

3 tbspn Panch Poron*

1 ½ tbspn Garam masala*

½ tbspn curry powder*

1 ½ tbspn salt

500g sugar

5 tbspn arrowroot

 

Spicey Apple and Elderberry

3 kg apples

½ kg elderberries

1 tbspn cinnamon

1 tbspn allspice

1 tbspn star anise

2 tbspn salt

½ litre ACV

½ litre vanilla infused ACV

1 kg honey

4 tbspn arrowroot

 

Sage and Honey

2.5 kg apples

600 g onions

1l Herb de Provence infused ACV

70 ml chopped sage leaf

1 ½ tbspn salt

500g honey

 

Apple and Tomato

2.5 kg apples

1 kg end of season tomatoes- red green and yellow

1 tbspn mustard seed

1 tbspn mustard seed

1 tbspn cumin

2 tbspn salt

1 litre oregano infused ACV

3 tbspn arrowroot

500g honey

 

Pumpkin and Vanilla

1.5 kg chopped pumpkin

2 chopped onions

Some mashed garlic if you want

500mg ml vanilla infused vinegar

1-3 tbsp grated ginger

1 tbsp salt

500mg honey

Method: Simmer all the ingredients except the arrowroot together for 1-2 hours until somewhat thickened. Mix the arrowroot with a little vinegar and add through, stirring thoroughly. Simmer for a further 10 minutes. Spoon into hot sterilised jars. Lasts about aa year.

Use in sandwiches, add to curries, stews, sir fries and we add the elderberry one to our stewed apple

 

* Spice blends for using in the chutneys

Ras el Hanout

Grind the following together:

2 tspn black peppercorns 1 tspn coriander seed1 tspn cumin1 tspn allspice 2 tspn cinnamon powder1 tspn nutmeg powder1 tspn ginger powder½ tsp cloves ½ tspn cardamom ¼ tspn chilli1-4 tspn rose petals

 

Panch Poron

Equal parts mustard seed, kalonji, Fenugreel, Fennel, Cumin

 

Garam masala

2 tbsp cumin seeds 2 tbsp coriander seeds 1 tbsp black peppercorns 2 tsp clove buds 1 tsp cardamon seeds 2 tsp cinnamon powder ¼ tsp chilli powder Grind and combine all the ingredients

 

Curry Powder

Combine the following powdered spices:

2 tspn coriander seed 2 tspn turmeric 2 tspn fennel seed 2 tspn cumin 1 tspn black pepper 1 tspn cardamom ¼ tspn chilli ¼ tspn asafoetida 1 ½ tspn mustard
